2 Simple Vegetarian Pasta Recipes For Weeknight Dinners

Who said pasta has to be paired with meat? If you're a vegetarian, pasta dishes are the perfect go-to option for quick weeknight meals. There are plenty of recipes that don't call for meat, but are still filling and delicious. Here are two simple, vegetarian pasta recipes to get you started. Each one makes enough for 2 people.

Spinach and Artichoke Rotini

Ingredients:

  • 4 ounces dry rotini pasta
  • 1 cup fresh baby spinach
  • 1 small jar of canned artichokes
  • 2 tablespoons olive oil
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon lemon juice
  • kosher salt and black pepper

Bring a large pot of water to a boil, and add plenty of kosher salt. Add your rotini to the pot, and boil for 10 minutes, or until al dente.

While the pasta is boiling, add some olive oil to a large skillet. When the oil is hot, add the artichokes to the pan, and cook until they start to brown. Add the spinach and lemon juice to the pan, and cook until the spinach wilts.

When the pasta is done cooking, dump it into the pan with the spinach and artichokes. Add the Parmesan cheese, salt, and pepper, and toss until the pasta is coated. Spoon onto plates, and enjoy.

Cheesy Italian Pasta Bake

Ingredients:

  • 4 ounces medium shell pasta
  • 1/2 cup skim milk
  • 1 tablespoon flour
  • 2 ounces asiago cheese, shredded
  • 2 ounces Parmesan cheese, shredded
  • About 8 cherry tomatoes, halved
  • About 8 medium mushrooms, halved
  • 1/4 teaspoon oregano
  • 1 teaspoon onion powder
  • kosher salt and pepper
  • 1/4 cup Panko breadcrumbs

Bring a large pot of salted water to a boil. Pour in your pasta, and cook for 6 minutes. The pasta should still be partially hard. Drain it, and set it aside.

In a saucepan, combine the milk, flour, salt, pepper, onion powder, and oregano. Bring to a gentle simmer, and simmer until thickened. Remove from the heat. Stir in the cheese until melted and incorporated. Add the pasta, mushrooms, and tomatoes. Stir, and then pour into a lightly greased casserole dish. Top the dish with the Panko breadcrumbs.

Place the casserole dish in a 350-degree Fahrenheit oven, and bake for 25 minutes, or until bubbly and golden brown. Let cool slightly, and enjoy.
